Bananas.

Happy Monday all!

We have had quite the lightening show and thunderstorm round' these here parts this morning. I love, love, rainy and stormy weather, it just makes me want to eat a huge bowl of chili with a good chunk of freshly baked jalapeno cornbread. Yep, that says comfort right there. 

You know what also says comfort? Banana bread. Yesterday, I visited my grandmother (the Italian one), who is basically the queen of banana bread. She taught me everything I know about banana breads, and you may have noticed that it has paid off! Anyway, we got to chatting about how easy it is to make banana bread. I mean, seriously...a kid could do it. Oh, oh...and here is the best part, you can throw anything into a banana bread...and this is where I start to get pretty freaking creative. 

So, I made you an Orange Banana Bread

then I made a Citrus-Sugar Glaze

and then I wondered whether the glaze make this banana bread, actual "bread" or "cake".


 Whatever. I coated the.entire.thing!

I find it hard to believe that I am not 300 pounds already.

Orange Olive-Oil Banana Bread with Citrus-Sugar Glaze (GF):

Ingredients:

For the Banana Bread:
3 c. almond flour
1/2 t. salt
1 t. baking soda
1/4 c. olive oil
1/2 c. agave nectar (or honey)
3 large eggs
1 T. pure vanilla extract
1 c. (about 3) very ripe bananas, mashed
zest of 1 orange

For the Citrus-Sugar Glaze:
1 c. powdered sugar
1/2 c. brown sugar
juice of 1 orange

Instructions:
1. Preheat the oven to 350 degrees F. Grease a 9x11 loaf pan.
2. In a large mixing bowl, combine the almond flour, salt, and baking soda.
3. Add the olive oil, agave, egg, and vanilla, mix to combine. 
4. In a separate bowl, mash the banana.
5. Fold the bananas into the batter.
6. Add the orange zest and fold again.
7. Pour the batter into the prepared pan and bake for 35-45 minutes, or until a toothpick inserted into the center of the bread comes out clean.
8. While the bread is baking make the glaze.
9. In a large mixing bowl, whisk together the powdered sugar and brown sugar.
10. Add the orange juice and whisk until the powdered sugar is dissolved. 
11. Allow the bread to cool completely after baking, turn it out onto a baking sheet lined with parchment paper, glaze, slice and serve.

Makes 10 slices.
