Bring me a Figgy Cookie.

Happy Friday y'all! 

Seester is on her way to visit for the weekend! So excited. Naturally, I have stocked the fridge with a few of her fave staples...roasted sweet potatoes, almond milk, salad greens, local organic ground beef, and I saved some of my coconut almond butter fudge for her to try (only because I'm the best seester ever). How are your New Year's resolutions going? I don't make any restrictive resolutions such as "I will not eat sugar." This is only because I am pretty much sure I'd die if I didn't have sugar, oh and I feel that it is a waste of my time to deprive myself of things. It drives me insane. Instead, I like to focus on things. This year I have decided to focus on a variety of aspects of my life:

1). Health: Focus on doing yoga at least 1-2 times per week in addition to my daily workout. I have experienced extreme inflexibility and sore joints without practicing yoga (which I was doing on the daily when I lived in Austin).
2). Faith: Start going to church more often. I have neglected this one big time and while I'd love to blame it on a busy schedule...I know that is just not the case.
3). Personal: Let God's will and plan guide my future. Try not to be in control of my own destiny...a.k.a. go with the flow. I have a ton of life style decisions that I need to make in the upcoming weeks that are HUGE. Putting aside one dream for another is not easy, but I will have to jump for fear of asking myself "what if," if opportunities are not taken. Don't fear the unexpected. 
4). Relationships: Find myself a man...just kidding. This actually pertains to all the relationships in my life: family, friends, etc. I want to really focus on spending more quality time with my family (like I do now...but even more!), develop better relationships with my friends (meaning that we hang more than once every 3 months), and meet new people. 

Please share with me your resolutions...I am dying to know!

Okay, so we know I can't give up sweets...it's just a known fact. 

So, obviously...I went ahead and made cookies.

Of course these cookies are health(ier).

They are made with almond butter and almond flour so you get like...twice the almond flavor in these babies!
Oh, and I added some dried figs and dark chocolate too.

Oh, and coconut. Because a cookie without coconut is just not a cookie...at all.
At least in my world. 

I go pretty hard with the coconut.

This is what the new year is all about. 
2013...cookies...for the win!

Fig, Chocolate, and Coconut Cookies (GF, Paleo):

Ingredients:
1.5 c. almond flour
1/2 t. baking soda
1/2 t. salt
2/3 c. all-natural, no sugar added, no salt added almond butter
1/2 c. raw honey
1 egg
1/2 t. pure vanilla extract
1/2 c. thinly sliced dried figs
1/3 c. dark chocolate chips (omit the chocolate if you are a strict Paleo enthusiast)
1/2 c. unsweetened coconut flakes

Instructions:
1. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Set aside.
2. In a large mixing bowl, combine the almond flour, baking soda, and salt.
3. In a separate mixing bowl, combine the almond butter, honey, egg, and vanilla using a spatula. Mix until smooth.
4. Add the almond flour mixture to the almond butter mixture and mix until a dough forms. 
5. Fold in the figs, chocolate chips, and coconut.
6. Drop the dough by rounded tablespoons onto the prepared baking sheets.
7. Bake for 12-15 minutes, or until slightly golden around the edges.
8. Let cool for 3 minutes on the baking sheet.
9. Devour!

Makes 20 cookies.
