Falling Out of Summer

How was your weekend? Mine was fabulous and laid back. Seester came to visit for a short trip and we got to spend a little time together on Saturday. I took a trip to Whole Foods with her for her job and nearly did back flips up and down the produce aisle as I discovered the return of my fave winter squash: DELICATA! It was the highlight of my weekend. Well, okay, the highlight was probably getting my nails did and shopping for clothes with the momma yesterday. Oh, and the weather which is delightfully, and unusually, cool for this time of year. I know it's a tease and we will probably be back to 100 degrees by next week. 

Now, I know it's kind of early to talk about fall, but it is my favorite season of the year...I love running and taking walks in the crisp, cool air, seeing the leaves change colors, wearing my scarves and cowgirl boots that have been tucked away in the back of my closet almost the entire year, oh, and coffee is just 10x better when it is cold outside. However, while it is still summer, let's talk about summer. 

I wish I could capture summer in a bottle and take it with me wherever I go...just think, when it's 30 degrees outside, you would be able to release summer and boom...hot concrete, snow-cones, and tan lines! I will miss summer produce. Let's put the last of it to good use shall, we?





















Zucchini

 coconut, and lime zest meet in muffin heaven!

These muffins are the perfect way to say "Hasta La Vista, Summer!"

Oh, and then I drizzled them with a little lime glaze.

Oh, and they are healthy for you too...I have been a huge advocate of the coconut flour lately.
Not to mention, I am practically putting olive oil in everything I bake. No joke.

well, it's like so...limey...if that makes sense?

I'm pretty sure we can all agree that anything with a glaze involved is going to be utterly delicious.

Ummm...just pour some sugar on me?

Pretty much.

Zucchini Coconut Muffins with Lime Glaze (GF):

Ingredients:

For the muffins:
1 large zucchini squash, shredded
4 large eggs
1/4 c. extra-virgin olive oil
1/4 c. agave nectar (or honey)
1 t. pure vanilla extract
1/2 c. coconut flour
1/2 t. baking powder
1/2 t. ground cinnamon
zest of 1 lime
1 c. unsweetened, shredded coconut

For the glaze:
1/2 c. powdered sugar
juice of 1 lime

Instructions:
1. Preheat the oven to 350 degrees F.
2. Line a 12-cup muffin pan with paper liners.
3. In a large mixing bowl, whisk all of the wet ingredients together.
4. Mix in the dry ingredients.
5. Fold in the shredded coconut.
6. Pour about two tablespoons of batter into each prepared muffin cup.
7. Bake the muffins for 20-25 minutes or until a toothpick inserted into the middle of each muffin comes out clean.
8. To prepare the glaze, whisk the powdered sugar and lime juice together until smooth.
9. Let the muffins cool completely before glazing.

Makes 12 muffins.
