Comfort in Cookies.

Happy Tuesday y'all! 

More rainy weather today. I don't mind. It makes for great studying and the perfect excuse for eating comfort food. 

Yesterday, muffins. Today, well, today is all about cookies.





























Apples and pecans get added to a cookie
 a cookie that is 

covered in a vanilla bean glaze 

and spiced with cinnamon. Oh, and there are rolled oats in this cookie too. 

I mean, you just cannot go wrong with an Apple Cinnamon Oatmeal Cookie with a Vanilla Bean Glaze now can you?

That's what I thought.

Apple Cinnamon Oatmeal Cookies with Vanilla Bean Glaze (GF):

Ingredients
1 1/4 c. gluten-free rolled oats
1/2 c. oat flour
1/2 c. buckwheat flour
1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 1/2 t. ground cinnamon
1/2 c. coconut oil, at room temperature
1 c. light brown sugar
1 large egg
1 t. pure vanilla extract
1/2 c. chopped pecans
1 small apple, peeled, cored, and roughly chopped
seeds of 1 vanilla bean
1/2 c. powdered sugar
water, as needed

Instructions:
1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. 
2. In a large mixing bowl, combine the oats, oat flour, buckwheat flour, baking powder, baking soda, salt, and cinnamon using a whisk.
3. In the bowl of an electric mixer fitted with the paddle attachment, beat the coconut oil and brown sugar on high for about 1 minute until creamy. 
4. Add the egg and beat again until the mixture looks silky, about 1 minute.
5. Add the vanilla extract and beat again. 
6. With the electric mixer running on low, slowly add the dry ingredients, working in two batches, to the wet ingredients, scraping down the sides of the bowl as needed.
7. Fold in the pecans and apples.
8. Scoop the batter by 1/4 c. onto the prepared baking sheet.
9. Bake for 15-18 minutes or until slightly golden brown.
10. Let the cookies cool for 5 minutes on the baking sheet and then transfer to a wire rack for cooling.
11. To make the glaze, combine the vanilla bean and powdered sugar, then slowly add the water by tablespoons to the mixture. The end result should be a slightly thick glaze, but not too drippy.
12. Drizzle each cookie with the glaze. Stuff your face.

Makes 26 cookies.
