Case of the Mondays...on Tuesday.

Monday's are for dealing with ignorant college admissions counselors who don't know which way is up. I mean seriously, I am a college graduate already, just add me to the freaking class as per the instructors request. No, Monday's are for the "I can't add you to the class until registration is open and we have evaluate all three of your transcripts...which, oh, by the way...could take MONTHS." No biggie. 

When Monday hands you a curve ball, which it will, because naturally you just had a fantastic weekend involving pedicures and light shopping, you learn to roll with it. Then, when you can't deal anymore, cookies are there to fix your problem. They are your best friend. Especially these cookies.

Brown-Sugar Oatmeal Walnut Cookies
(oh, with olive oil)

which I dipped in melted dark chocolate...

 because Monday's get a hell of a lot better when cookies AND chocolate are involved.
Emphasis on the CAPITALIZATION.

Let's hope today is a better day. :)

Brown Sugar Oatmeal Walnut Cookies (GF):

Ingredients:
4 large egg whites
2 c. packed dark brown sugar
1 c. olive oil 
1 1/2 c. oat flour
1 1/2 c. rolled oats
2 t. baking powder
1 c. chopped walnuts
melted dark chocolate (optional) 

Instructions:
1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
2. In the bowl of an electric mixer, beat the egg whites on high for 1 minute until frothy. Add the brown sugar and olive oil and beat on medium speed for another minute.
3. In a large mixing bowl, combine the oat flour, rolled oats, and baking powder. 
4. With the mixer on low, add the flour mixture (in two batches) to the wet mixture. Fold in the walnuts.
5. Scoop the batter by rounded tablespoons onto the prepared baking sheets, spacing about 2 inches apart with each scoop. 
6. Bake for 15 minutes or until golden brown.
7. Let the cookies cool for about 3 minutes on the baking sheet before transferring to a wire rack. 
8. Once the cookies are completely cooled, dip half into a bowl of melted dark chocolate (optional, but totally recommended). 

Makes about 40 cookies.

    Read your blog-post-thang...and um, enjoyed the cookies but hadn't realized that rainsins and coconut have been 'outlawed' from cookie recipes ? Wow, who would've thunk it ?
