Tea for Two.

Happy Wednesday y'all! 

Did I mention that my family is moving this Friday? Yes, my parents have actually purchased a house, after years of renting, blah. blah. blah. Let's just say that we are all a bit excited. I love when my parents have a house because they are really, really, ridiculously great at making it a home. Before I can blink, my mom will have the house decked to the nines in gorgeous bedding, comfy, leather couches, refurnished furniture, and most importantly....the cable and Internet will be hooked up on time. She is like a wizard, one twinkle of her magic wand, and presto, bam, house is in tip-top shape. 

Now, my dad is more of the technical guy, so he will have all the furniture broken down and put back together in no time. By Friday night, we will probably have steaks on the grill and glasses of wine ready on the patio. What can I say? That's just my family. 

Well, it has been interesting having our new family dog in the apartment with us. She is definitely my cooking buddy and helps me taste test my recipes. Of course, she has no negative feedback, everything she eats is followed by a tail wag with a tongue hanging out of her head. She's so sweet. Kind of like this bread that I made. I love tea room food. Tid-bit: I used to work for a tea-room in my early college years and I loved it. Who doesn't love an 8-2 job with free, delicious food. Not to mention...desserts? 

I loved our lemon bread...it's sad because we told our customers that it was homemade when we really purchased it from Sam's. Seriously? If I had a tea-room all of my food would be made in-house! Oh, oh, but really the bread was so delicious that I could have cared a less at the time. Anyway, we all know how I love the lemon and lavender combo. So, bada-bing...

Who wants to help me move? I may have a couple of slices of this on hand? Maybe with some tea as well. Or maybe we will just nix the tea and have a glass of wine...or three!

Meyer Lemon-Lavender Tea Bread with  Meyer Lemon-Lavender Glaze (GF):

Ingredients:

For the bread:
3 c. almond flour
1 t. baking soda
1/2 t. salt
5 large eggs
1/4 c. agave nectar (or honey)
1/4 c. melted coconut oil
zest of l Meyer lemon
juice of 1/2 a Meyer lemon
2 t. lavender buds

For the glaze:
1 c. powdered sugar
juice of 1 Meyer lemon
1 t. lavender buds

Instructions:
1. Preheat the oven to 350 degrees F. Grease a 9-in. loaf pan with cooking spray.
2. In a medium mixing bowl, combine the almond flour, baking soda, and salt. 
3. Using a spatula, mix in the eggs, agave, and coconut oil.
4. Fold in the zest, juice, and lavender buds.
5. Pour the batter into the prepared pan and bake for 40-45 minutes or until a toothpick inserted into the center of the bread comes out clean.
6. Make the glaze while the bread is baking.
7. In a small mixing bowl, whisk together all of the ingredients for the glaze. Set aside.
8. Let the bread cool completely in the pan. Once cooled, turn the bread out onto a baking sheet lined with parchment paper. Pour the entire glaze over the cake. Slice and serve.

Makes 9-10 slices.

  1. This sounds amazing! Wondering if you could use GF flour in place of the Almond flour (since it's so expensive) or if that would change the texture/taste of the bread?

  2. Is Almond meal the same as Almond flour?

    1. Almond flour and almond meal are essentially the same. However, almond flour is ground into a finer texture and is more uniform in consistency so it makes for better baked goods. However, you can't really tell THAT much of a difference and can use both interchangeably.
