Sun-Dried.

Happy Thursday y'all!

I am loving these sunny days. They are great for taking the dogs on a walk and doing an outdoor workout. Yesterday, I did the Love your Legs workout with the Tone It Up girls and whew...let's just say I was feeling the burn. I definitely needed a pick me up after that one! While a frozen margarita was calling my name, all I had were some R.W. Garcia 3 seed Veggie Dippers and a bag of carrots. So, naturally, all I needed was dip. Hmmmmm project time! Bada-Bing!

Sun-Dried Tomato and Walnut Dip

This dip is the shizzzzz. It's slightly tangy from the sun-dried tomatoes, with a hint of sweet basil, and a crunchy bite from the walnuts.
Just what I needed after a good workout.


Now, about that margarita...!?



Sun-dried Tomato and Walnut Dip:

Ingredients:
1 c. sun dried tomatoes
1 c. boiling water
1 bunch fresh basil leaves
1/4 c. walnut oil
2 cloves of garlic
1/2 c. raw walnuts
salt and pepper, to taste

Instructions:
1. Place the sun-dried tomatoes in a medium bowl and pour the boiling water over them. Let sit for 15 minutes, drain completely.
2. Add the basil leaves, walnut oil, and garlic to the food processor, along with the re-hydrated tomatoes. Pulse until smooth.
3. Add the raw walnuts and pulse until roughly chopped.
4. Season with salt and pepper.
