Cookies fix everything.

Thank goodness it's Friday! I say this mostly because I probably had the worst day of my life yesterday...well, not of my life, but the worst day that I have had in a loooong time. I had a huge migraine yesterday that was topped off by someone arguing with me full-force, not in person, but over the Internet. Seriously? I was over it. I didn't even consider it a "fight" because I didn't have anything in me to fight. 

Let's get real here...fights are childish and we only look back on them to laugh years from now when we are old. I guess I have matured enough to not really give much effort to arguments. To me, it's not worth it. Anyway, can you tell I don't like to fight? I don't like to scream, yell, slap, hit, curse, or feel the need to hash things out with others at the top of my longs over meaningless things. 

Okay, let's talk about how cookies fix everything. Yep, sweets are my rescue on a bad day. These cookies pretty much say "screw everything and why don't we curl up on the couch with a glass of milk for dunking." 













So, today cookies.

 Cookies that fix everything from broken hearts to fist fights.

 Not that I get in fist fights.

 No fights. Just cookies.

Almond Butter Banana Oatmeal Cookies (V):

Ingredients:
2 c. rolled oats
1 1/4 c. almond flour
1 c. all-purpose flour (could also substitute gluten-free flour blend)
1 t. baking powder
1 t. baking soda
1 1/4 t. salt
1 c. granulated sugar
1 c. packed dark brown sugar
1 c. almond butter
2 ripe bananas, mashed
1 t. pure vanilla extract.
1/4 c. + 2 T. melted coconut oil
1 c. dried raisins (optional)

Instructions:
1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
2. In a large mixing bowl, combine all of the dry ingredients.
3. Add the almond butter, bananas, and vanilla. Pour the melted coconut oil on top and mix well. Fold in the raisins if you want (i did this with the last batch).
4. Spoon the batter by rounded tablespoons onto the prepared baking sheets, separating the batter about 2 inches from one another.
5. Bake for 12-15 minutes or until slightly golden brown. Allow cookies to cool on the baking sheet. They will be crispy on the outside, chewy on the inside.

Makes 2 dozen large cookies.
