Tea with Jam and Cookies.

Happy Wednesday all!

So, let's re-cap a bit. Monday: Muffins, Tuesday: Cake, and today, well, today is all about cookies. Are you in a sugar coma yet? Hey, I warned you early on...I have a sweet tooth. Okay, okay, well, maybe cake and cookies are sweets, but muffins can't be considered a "sweet" can they? 

For the sake of my eating muffins for breakfast, lunch, and dinner, let's just that muffins are not a sweet. No, no...they are just healthier versions of cupcakes, right? Even though they have the same amount of sugar baked in, a cupcake has icing...sweet.justification. Like I said, today: cookies. Have two or three. They are harmless.





I think that my sweet tooth originated mainly because I like pretty things


and sweets are usually really, really, ridiculously good looking.

Like these cookies.
 
Plus, they are pretty darn tasty too!

Now, who wants to make me a salad?

Raspberry Pecan Thumbprint Cookies (GF)

Ingredients:
3 c. pecan flour/meal 
3/4 c. turbinado sugar (you can also substitute brown sugar)
1/4 t. salt
3 large egg whites
1 t. pure vanilla extract
1/2 t. raspberry extract, optional
1/4 c. agave nectar (or honey)
1/2 c. raspberry preserves, at room temperature (I used Stonewall Kitchen)

Instructions:
1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, mix together the pecan meal, sugar, and salt.
3. Add the egg whites, vanilla extract, and raspberry extract, mix well until the dough begins to come together.
4. Fold in the agave, and mix until the dough forms into a large ball.
5. Roll the dough using your hands, into tablespoon-sized balls, place each ball on the prepared baking sheet, flatten each ball with the palm of your hand. Then, place your thumb in the middle of each flattened ball of dough to make a tiny imprint.
6. Bake for 15 minutes, or until cookies are slightly firm to the touch. 
7. Let the cookies cool for 5 minutes on the baking sheet, transfer to a cooling rack, and then fill each cookie with a little spoonful of jam.

Makes 1 dozen cookies.
