Going Vegan.

Now, let's get one thing straight people. I am definitely not a vegan. However, I have come to find that the vegans definitely know their food. In turn, I have come to develop the utmost respect for them. Anyone who can go a day, moreover, their entire life, without a piece of juicy, tender chicken, is my hero. So, like I said...much respect. Don't get me wrong...I love me some tofu and I once had a vegan apple crumble that was out of this world. Surprise, surprise, it was from Whole Foods. So, I had a mad craving for it yesterday...and 

I fixed it...with a faux buttery, almond, oatmeal crust.

Oh, and a layer of apple butter jam

topped with more of that fake, buttery stuff. 

The possibilities with going vegan are endless...

Vegan Apple Butter Oatmeal Crisp (gf):


Ingredients:
3 c. almond flour
3 c. rolled oats (I used gluten-free but you can use regular)
3 sticks of Earth Balance vegan buttery sticks, softened
1 c. packed dark brown sugar
2 t. ground cinnamon
3/4 t. baking powder
1/2 t. salt
2 1/4 c. apple butter jam


Instructions:
1. Preheat oven to 375 degrees F.
2. Spray a 9x11 baking dish with cooking spray and set aside.
3. Using an electric stand mixer fitted with a paddle attachment, beat all ingredients together except the jam.
4. Measure two cups of the mixture and press it into the bottom of the pan.
5. Spread the apple butter evenly over the mixture in the dish.
6. Sprinkle the remaining mixture over the apple butter and press down lightly with the tips of your fingers.
7. Bake for 30 minutes, or until golden brown on top. Let cool for 10-15 minutes before serving.


Note: I recommend serving a scoop of this with your favorite vanilla ice cream (my choice is of course, Blue Bell...which defeats the whole vegan-ness purpose of this dish). So, serve with your favorite vegan ice cream.

  1. You may not be vegan but you got it right! I look forward to trying it! I should have made apple butter this year, but I passed. Oh well.

  2. Shannon, thanks! I usually make my own apple butter as well. I just love the smell that flows through the house as it simmers on the stove. Sooooo good. I guess there is always next year, but I have found some good store bought varieties that are low in sugar and made with all natural ingredients. So, that is a plus!
