Secret Recipe Club!

Happy Monday beautiful people!

Well, well, well, look what we have here. Another Secret Recipe Club reveal. O yes. This month I was super excited to find out that my secret blogger was Amy from Savvy Kitchen. Now, Amy is Italian, so you can imagine that I felt we could definitely be bff's. After browsing some of her delicious recipes, I ironically didn't settle on one of her delish Italian dishes, like Chicken Parmigiana, but instead went for something I have been really craving...donuts. O yes. When I read Amy's recipe for Baked Apple Donuts, I knew that they were going to hit the spot, especially. Now, because my little celiac seester was in town on spring break this weekend, I decided to make the donuts gluten-free, and o.my. gosh-ness...they were out of this world.

I mean, really? You just can't go wrong with a cinnamon sugar topping.
 Tip: mix it into softened butter...and boom! Out of this world!

Baked Apple Donuts (GF):


Ingredients:
For the donuts:
1 c. almond flour
1 1/2 t. baking soda
1 t. ground nutmeg
1 t. ground cinnamon
1/2 c. brown sugar
4 eggs
1 small apple, peeled, cored, and finely chopped


For the topping:
1/4 c. melted coconut oil
1/2 c. granulated sugar
1 t. cinnamon


Instructions:
1. Preheat the oven to 350 F. Place a cooling rack over a sheet of parchment paper.
2. Grease a donut pan.
3. Place the almond flour, baking soda, cinnamon, and nutmeg in a large mixing bowl, mix well.
4. In a separate mixing bowl, whisk together the eggs and brown sugar.
5. Add the dry ingredients to the wet ingredients and mix well using a spatula.
6. Pour the batter into each donut cup, filling each 3/4 the way full.
7. Bake for 10-15 minutes.
8. While the donuts are baking, make the topping.
9. Melt the coconut oil in a bowl. Set aside.
10. Combine the granulated sugar and cinnamon on a flat plate and distribute evenly over the plate.
11. Take the donuts out of the oven, and using a knife, twirl it around the outer edge of each donut, until the donut comes out of the pan easily.
12. While the donuts are still hot, dip both sides in the coconut oil, then press both sides into the cinnamon sugar mixture, making sure to coat the donut well.
13. Place the donuts on the prepared cooling rack.


Makes 8 donuts.

  1. YUM! These remind me of family trips to the apple orchard during the fall. They always served hot cider and cinnamon-sugar donuts. Love that they're baked.

  4. Yum!! At first I thought it was a bagel with roasted cinnamon sugar crunch, which also sounds delicious, but donuts make it even better!!

  5. Chelsey... first, let me just say how much I enjoyed having you as my SRC assignment this month. I've spent hours reading your posts and you have such a wonderful happiness and balance in life that shows through your writing. You remind me so much of my daughter, Liv.
    Can I just tell you how popular your Brown Butter PB Cookies were?? We've made 3 batches in just one week and they will be heading with us next weekend as we head to Liv's next dance event. I've had a number of the dance girls ask "Please bring those cookies again!!" every time I see them.
    As for these donuts... well, Liv would love them as well. She's a cinnamon sugar fiend and would positively love the heart you drew in the sugar almost as much as the donuts themselves.

  7. Wow--I am craving these now! My favorite donuts are the simple cinnamon-sugar ones. This is over-the-top with the apples! Great SRC post! (One can never have too much cinnamon and sugar!

  8. I just added these to next weeks meal plan! They sound awesome! Love that the are gluten free. One problem, no donut pan. Would a mini muffin pan work or something?

  10. Debbi! A mini muffin pan would definitely work. Even a regular sized muffin pan at that! Kim: I am so glad you enjoyed reading my blog! I really do have a passion for life and for food! My food centers around my family and there is never anyone hungry around here, that is for sure! I know exactly what you mean with the popularity of these cookies. They are so popular..my dad took them to work and his co-workers have been requesting them every single day since then! Oh, I actually shipped them to my older cousin who lives in new york who is just as crazy about peanut butter as I am. He is insanely in love with them! Feast on the Cheap: You are killing me with the apple orchard and the hot cider...love it! To everyone, thanks so much. I am so glad you all enjoy!
